Fish Florentine



1 pound fish fillets, fully thawed.

Preheat oven to 375.



Florentine Sauce:

3 tablespoons butter
3 tablespoons flour
1-cup milk
½ cup cream
Salt & pepper to taste
¼ teaspoon nutmeg
½ pound fresh spinach cooked, drained and chopped
½ cup grated Parmesan cheese
1-tablespoon butter for the topping



Melt butter in saucepan. Add flour and stir with wire whisk until blended. In another pan, heat milk and cream until boiling and add all at once to the butter and flour mixture, stirring until smooth. Season with salt, pepper & nutmeg. Put spinach in the empty pot and add ½ cup of the sauce. Heat thoroughly but do not boil. Spoon onto a heatproof platter and arrange fish on top. Stir half of the cheese into the remaining sauce and spoon over the fillets. Sprinkle with leftover cheese. Dot with butter. Bake for 10 minutes or until heated through.
