Pretty good site right there for the first time stuffer..

Absolutely cook the stuffing first, especially if you use a meat type stuffing like we do and not just the Stove-top which
is much more forgiving to undercooking than meat...

We normally don't stuff the neck of the turkey unless it seems that it needs it.. I remember the olden days we used
to but I think turkeys have changed shape a bit over the years nad don't have a huge cavernous neck opening like
they used to.

A couple of really important points to remember in turkey stuffing are:

+ Take out the turkey giblets and neck that are usually in the cavity, before stuffing (I've seen this not done)

+ Use a thick crusty bread (like an Italian loaf end cut to size) to block the end, Lighter breads
will allow too much moisture out and dry out alot of the stuffing at the opening. If you like crusty
stuffing then ignore this tip :)

Chicken stuffing? Never done it except for the old stuffing the chicken with a beer can :) Oh or wrapping chicken
around things but that's a different Idea entirely.
