By far one of the best Belgian Trappist beers in the world. Chimay was started by monks in a monastery and to this day the company has expanded beyond the abbey. Since the 1850's they have brewed three unique beers; rogue, bleue and blanche!

Here is a quick overview:
1. Chimay Red: (7% abv.) Dark brown in color and by far my favorite. Somewhat sweet/fruity in taste.
2. Chimay White: (8% abv.) Copperish tone in color and the dryest compared to it's two brothers. Has a very bitter taste but nothing like pale ale.
3. Chimay Blue: (9% abv.) Darkest, strongest and the most classical amongst the other two. Conidered to taste better with age. I drank a 25oz. bottle by myself and it almost put me under.

Chimay is known to make kick ass cheese but I have yet to try it. If you enjoy European beer and/or are tired of Bud--->water, go ahead and give this classic beer a shot! 25 oz. bottles go for 9 to 10 dollars.
